Ingredients:
“Chocolate” cake
- 3 eggs
- 1 cup almond flour
- 1/4 cup Psyllium Husk (powder)
- 1/4 cup Cocoa powder (unsweetened)
- Pinch of Salt
- 1/4 cup coconut milk
- 1/4 cup sour cream
- Optional: espreso powder
- 1/2 cup Erythritol
- 1 teaspoon baking powder
Cream Cheese Filling
- 1 teaspoon vanilla extract
- 8 ounce cream cheese romm temp)
- 8 tablespoons Butter (softened)
- 1/4 cup sour cream
- 1/4 cup Erythritol
Instructions on how to make “Chocolate” Keto Roll Cake
Chocolate Cake
- Heat oven to 350 F
- Line a roll pan with parchment paper
- Whisk together all dry Ingredients, until evenly combined
- In a separate bowl, Whisk all wet Ingredients
- Fold in the flour mixture with a rubber spatula
- Stir together until just combined
- Spread the batter evenly into prepared pan
- Bake for 12-15 minutes, or until top of cake springs vsck when touched
- Carefully lift the paper and cake out o to a flat surface
- Roll the cake and cool
- Meanwhile, make the cream cheese filling
Cream cheese filling
- Whisk together cream cheese, Erythritol, Butter, sour cream, and vanilla
- If the filling is to thin, add more Erythritol
- Once the cake has reached room temp, transfer to a flat surface
- Spread the filling evenly over cake, leaving a 3/4- inch border on all sides
- Re-roll the cake
- Wrap in a plastici Wrap and refrigerate
- Slice and serve
