Ingredients:
- 10.5 oz. almond meal
- 2 teaspoons baking powder
- 4 eggs
- 7 oz. raspberries (fresh /frozen)
- 4 tablespoons honey
- 4 tablespoons coconut oil
- pinch of ginger (grated)
Instructions on how to make Gluten-Free Raspberry Muffins
- Preheat Oven to to 350 F/180 °C
- In a large bowl, mix together almond meal and baking powder
- Add coconut oil, eggs, ginger and honey
- Fold in the raspberries last
- Spoon into paper-lined muffin tins
- Bake until golden and cooked about 35 minutes
- Serve and enjoy
