  • 10.5 oz. almond meal
  • 2 teaspoons baking powder
  • 4 eggs
  • 7 oz. raspberries (fresh /frozen)
  • 4 tablespoons honey
  • 4 tablespoons coconut oil
  • pinch of ginger (grated)

Instructions on how to make Gluten-Free Raspberry Muffins

  • Preheat Oven to to 350 F/180 °C
  • In a large bowl, mix together almond meal and baking powder
  • Add coconut oil, eggs, ginger and honey
  • Fold in the raspberries last
  • Spoon into paper-lined muffin tins
  • Bake until golden and cooked about 35 minutes
  • Serve and enjoy
