Sugar-free and Low-Carb Sponge Cake
As you already know, Sponge Cake got it’s name because it resembles a Sponge. This sugar-free, low-carb cake is also and gluten and nut free.
Sugar-free and Low-Carb Sponge Cake Recipe

- Cook time – 30 minutes
Yields – 12 servings
Ingredients:
- 1/2 teaspoon cream of tartar
- 1 teaspoon vanilla extract
- 9 eggs
- 1 teaspoon liquid Stevia
- 1/4 cup coconut flour
- Optional – Lemon zest
- 1/4 cup vanilla protein powder
- 1/2 cup Erythritol
- Pinch of Salt
- 1/2 teaspoon baking powder
- 4 tablespoons Butter (melted and cooled)
Instructions on how to make Sugar-free, low-carb Sponge Cake
- Preheat the oven to 325 F
- Prepare your baking pan for nonstick
- Melt butter in the Microwave on low
- Set aside to cool down
- Using a hand whisk, Whisk together cream of tartar, Erythritol, Stevia, vanilla extract, and Lemon zest
- Whisk in whole eggs one at a time
- Add melted butter and whisk a little more
- Add flour, baking powder, vanilla powder, and Salt
- Mix well
- Pour cake mix into 24 x24 cm oven pan or mould
- Bake for about 30 minutes or until golden Brown
- Allow to cool completely before serving
- Keep refrigerated
