Low-carb peanut Butter bars – Recipe

The way of preparations – easy

Prep time:

  • Prep time – 15 minutes
  • Cook time – 20 minutes

Yields – 32 bars

Ingredients:

Crust:

  • 1/4 cup almond flour
  • 1/3 cup Swerve
  • Pinch of Salt
  • 1/4 cup chilled Butter

Peanut Butter Vanilla Frosting:

  • 2/3 cup peanut butter (creamy)
  • 1/4 cup butter
  • 1/1 cup Swerve
  • 2 teaspoons vanilla extract OR Optional
  • 1/4 cup heavy whipping cream
  • Cocoa powder – Optional

Instructions on how to make low-carb peanut Butter bars

Crust:

  • Cut 1/4 cup butter into small pieces
  • Preheat the oven to 350 F
  • In a food processor put all the crust Ingredients
  • Pulse until the mixture resembles fine crumbs
  • Press the mixture evenly into the bottom of an 8-inch square pan
  • Bake 15 minutes, or until light golden Brown
  • Set aside to cool

Butter Filling:

  • In a microwave sade bowl, combine the creamy butter and butter
  • Melt together about 1 minutes
  • Stir in cocoa, powdered sweetener until well combined
  • Stir butter mixture with cream and vanilla
  • Pour over cooled crust and spread evenly with an offset spatula
  • Refrigerate about 20 minutes
  • Take out
  • Let set aside, at room temp for about 1 hour.
