Ingredients:

“Chocolate” cake

  • 3 eggs
  • 1 cup almond flour
  • 1/4 cup Psyllium Husk (powder)
  • 1/4 cup Cocoa powder (unsweetened)
  • Pinch of Salt
  • 1/4 cup coconut milk
  • 1/4 cup sour cream
  • Optional: espreso powder
  • 1/2 cup Erythritol
  • 1 teaspoon baking powder

Cream Cheese Filling

  • 1 teaspoon vanilla extract
  • 8 ounce cream cheese romm temp)
  • 8 tablespoons Butter (softened)
  • 1/4 cup sour cream
  • 1/4 cup Erythritol

Instructions on how to make “Chocolate” Keto Roll Cake

Chocolate Cake

  • Heat oven to 350 F
  • Line a roll pan with parchment paper
  • Whisk together all dry Ingredients, until evenly combined
  • In a separate bowl, Whisk all wet Ingredients
  • Fold in the flour mixture with a rubber spatula
  • Stir together until just combined
  • Spread the batter evenly into prepared pan
  • Bake for 12-15 minutes, or until top of cake springs vsck when touched
  • Carefully lift the paper and cake out o to a flat surface
  • Roll the cake and cool
  • Meanwhile, make the cream cheese filling

Cream cheese filling

  • Whisk together cream cheese, Erythritol, Butter, sour cream, and vanilla
  • If the filling is to thin, add more Erythritol
  • Once the cake has reached room temp, transfer to a flat surface
  • Spread the filling evenly over cake, leaving a 3/4- inch border on all sides
  • Re-roll the cake
  • Wrap in a plastici Wrap and refrigerate
  • Slice and serve
