Ingredients
- 2 eggs
- 1/3 cup coconut flour
- 2 tablespoon coconut oil (room temperature)
- 1 tablespoon Stevia or sweetener to taste
- 1 banana (mashed)
- 1/2 tablespoon baking powder
- 1/4 teaspoon ginger
Instructions how to make gluten-free banana muffins
- Preheat oven to 350 degrees F
- Prepare your silicon muffins molds, or coat muffin pans with non-stick spray, or use paper liners
- Whisk eggs with Stevia
- Add all the rest ingredients and mix until smooth
- With a spoon, pour batter into silicon molds
- Bake in a well-heated oven.
- Bake for 25 to 30 minutes
