Gorgeous Low-Carb Cake with Coconut Flour And Pecan Nuts

Low-Carb Pecan Cake – Recipe

Yields – 12 servings
Ingredients:
- 8 eggs (separated)
- 2/3 cup + 3 tablespoons low-carb granulated sugar substitute Swerve – Erythritol Sweetener (Zero Carb)
- 1 cup butter (melted)
- 1 tablespoon vanilla
- 3/4 cup + 4 tablespoons pecan nuts (ground)
- 1 tablespoon baking powder
- 1 1/3 cup + 4 tablespoons coconut flour
- 5 tbsp Sugar-free caramel topping
Instructions how to make pecan cake
- Prepare two bowls
- Preheat oven to 350 F
- Separate egg yolk from whites in two bowls
- In a large bowl, beat egg whites and 2/3 cup Swerve (or sweetener of choice)
- Add butter, 2/3 cup ground pecan nuts, coconut flour, and baking powder
- Mix together with a hand mixer for about 3 minutes
- Pour batter into a cake pan which has been buttered and floured to ensure easy removal. (You can also use parchment paper)
- Spread batter evenly over the pan
- Bake for about 20 minutes
- Meanwhile, in a small bowl, combine egg yolks, 3 tbsp Swerve, 4 tbsp coconut flour, and vanilla
- Stir well with a fork
- 10 minutes before the cake is finished baking (after 20 minutes of baking)
- Take out the cake
- As soon as the cake comes out of the oven, pour the cake with egg yolk mixture
- Spread egg yolk mixture evenly over the cake
- Bake for 10 minutes more
- Remove cake from the oven
- Over the still hot cake, pour sugar-free caramel topping
- Sprinkle 4 tablespoons ground pecan nuts
- Set aside to cool
- Serve and enjoy
