Fried Zucchini with Almond Flour

Yields – 8 servings


  • 4 medium Zucchini (cut into 1/4″ thick slices)
  • 3 large Egg (beaten)
  • 2/3 cup Almond Flour
  • 2/3 cup Parmesan cheese (grated)
  • 1/2 tsp Paprika
  • Salt to taste
  • 1/4 teaspoon Black pepper
  • 1 teaspoon Organic Italian Seasoning
  • vegetable oil, for frying

Instructions on how to make Fried Zucchini with Almond Flour

  • Prepare two bowls
  • 1st bowl with eggs
  • 2nd bowl with a mixture of almond flour, grated Parmesan cheese, Italian seasoning, paprika, sea salt, and black pepper.
  • Heat a 1/4 inch of oil in the bottom of a large skillet over medium heat.
  • Coat the zucchini in the flour mixture and then dredge in the eggs to coat
  • Add a single layer of zucchini to the hot oil, being careful not to crowd the pan.
  • Fry for 1-2 minutes on each side, until golden brown.
  • Repeat with remaining zucchini.
  • Drain on a paper towel-lined plate.
  • Sprinkle with salt, if desired.
