Healthy Recipe for Meatballs in Tomato Sauce

Ingredients:
Meatballs:
- 1 pound 85% lean ground beef
- 2 tablespoons sour cream
- 1 egg
- ½ cup grated Parmesan
- 1 teaspoon salt
- ¼ teaspoon black pepper
- 1/8 teaspoon cayenne pepper
Tomato Sauce:
- 1 tablespoon olive oil
- 2 tablespoons chopped garlic
- 1 cup tomato sauce
- teaspoon salt
- 1 onion (chopped)
- ¼ teaspoon black pepper
- 1/2 tablespoon dry parsley
- ¼ teaspoon cayenne pepper
Instructions how to make Meatballs in Tomato Sauce
- Preheat oven to 400 degrees F.
- Spray a large baking sheet with olive oil.
- In a large bowl, use your hands to mix the ground beef, sour cream, egg, Parmesan cheese, salt, and black and cayenne pepper.
- Lightly oil hands and roll 12 balls
- Arrange the meatballs on the prepared baking sheet and bake for 10 minutes.
- Meanwhile, in a large, wide pot, heat the olive oil over medium heat, about 3 minutes.
- Add the onion and cook, stirring, 1-2 minutes, just until golden.
- Add the tomato sauce, salt, dry parsley, garlic, black pepper, and cayenne and bring to a boil.
- Dip the meatballs, spooning the sauce over them.
- Cover, reduce heat to medium-low and simmer for 20 minutes.
- Serve and enjoy
