Low-Carb and Sugar-Free Chocolate Muffins

These keto chocolate muffins are made with coconut flour, which is grain free, full of fiber and impossibly good for you on a low-carb diet. Made with coconut flour, they are not the only low carb but also and gluten-free.

Keto Chocolate Muffins – Recipe

The way of preparation – easy

  • Cooking time – 20 minutes

Yields – 8 muffins

Ingredients:

Muffins:

  • 5 eggs
  • 1/4 cup coconut flour
  • 1/4 cup butter (melted)
  • 4 tablespoons pure cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • 4 tablespoon Swerve erythritol
  • 1/2 bar (50 g) dark chocolate, chopped

Serving option ( entirely optional) 

  • 1/2 bar (50 g) dark chocolate, melted
  • low-carb vanilla pastry cream

Instructions on how to make Keto Chocolate Muffins

  • Heat the oven to 325 F
  • In one bowl, mix together all wet ingredients – eggs and butter
  • Add dry ingredients – cocoa powder, cinnamon, baking powder, coconut flour, vanilla extract and erythritol (or sweetener of choice)
  • In the end, stir in 50 g of chopped chocolate
  • Bake in a silicone mold
  • Bake 20 minutes in a well-heated oven
  • Check that they are done – they should feel spongy when you press on them
  • Remove from the oven and set aside to cool
  • Serve and enjoy
