These keto chocolate muffins are made with coconut flour, which is grain free, full of fiber and impossibly good for you on a low-carb diet. Made with coconut flour, they are not the only low carb but also and gluten-free.

Ingredients:
Muffins:
- 5 eggs
- 1/4 cup coconut flour
- 1/4 cup butter (melted)
- 4 tablespoons pure cocoa powder
- 1 teaspoon baking powder
- 1/2 teaspoon cinnamon
- 1 teaspoon vanilla extract
- 4 tablespoon Swerve erythritol
- 1/2 bar (50 g) dark chocolate, chopped
Serving option ( entirely optional)
- 1/2 bar (50 g) dark chocolate, melted
- low-carb vanilla pastry cream
Instructions on how to make Keto Chocolate Muffins
- Heat the oven to 325 F
- In one bowl, mix together all wet ingredients – eggs and butter
- Add dry ingredients – cocoa powder, cinnamon, baking powder, coconut flour, vanilla extract and erythritol (or sweetener of choice)
- In the end, stir in 50 g of chopped chocolate
- Bake in a silicone mold
- Bake 20 minutes in a well-heated oven
- Check that they are done – they should feel spongy when you press on them
- Remove from the oven and set aside to cool
- Serve and enjoy
